How can I as a UK citizen run a property as a sole trader in Greece?

If I buy a property in Greece costing over 250k euros, how can I set up as a sole trader to run it? I am a UK citizen - I am confused as they say you need residency to set up as a sole trader which you get through the golden visa. However it says you cannot gain access to employment. There seems to be discrepancy between residency and citizenship. If I cannot operate as a sole trader the tax is likely to be too high to make it viable and I will lose money on the investment.

    Residence permit granted after an investment in a property with minimum value of 250,000 euros does not give one access to the job market. You are only allowed to exercise business activity as shareholder in a company. Setting up a business as a sole trader operates under a different type of residence permit.

    You get a five-year residency but not citizenship. You are not allowed to work as an employee.
